How to make Aburi Nigiri Sushi?

This month, Chef Masa presents our Aburi Nigiri Sushi.
Sushi making is a craft that demands great dedication and perseverance. Developing the muscle memory necessary to execute the intricate techniques and movements to create the perfect sushi takes years of focused practice and repetition.
Flame-searing, or Aburi, is a popular technique used in sushi-making to impart a smoky flavour and slightly charred texture.
To flame-sear sushi, our chefs use a blowtorch to quickly sear the top of the sushi, coated with a thin layer of oil or sauce. This technique requires precision and finesse. The chef must apply the heat evenly and for just the right amount of time to achieve the desired result without overcooking the fish.
One of the best sushi techniques for flame-seared sushi is to use fatty fish such as salmon or snapper. The high-fat content of these fish allows them to withstand the torch's heat without drying out or becoming tough. Additionally, our chefs aim to create a beautiful contrast between the seared and unseared parts of the sushi, which can be achieved by carefully layering the sauce or oil on top of the sushi before searing.
